Pancake Day 2024


-Raw Fish & Prawn Mix (fish, crustacean)

-Homemade Sauce (gluten, fish, crustacean, dairy)

-Butter (dairy)


-Diced Onions (optional to use)


-Pancake mix (flour, eggs, milk)

-Seasonings (optional)


1. Preheat oven to 190 (fan). Place raw seafood into a small roasting tray or oven proof bowl. Top with the butter. Place into the oven for approximately 7-8 mins or until the raw prawns turn fully pink. 

2. In the meantime, make your pancake and place aside. 

3. Lightly fry the onions (if using) until soft but not brown. 

4. Add the sauce to the onions (or to a clean pan if not using onions). Heat the sauce gently in a pan, until it just starts to bubble. Remove the fish from the oven, strain, reserving the butter. Add the reserved butter to the sauce mix until a nice consistency is achieved. Do not boil, only gently simmer to heat thoroughly. 

5. Place the pancake back over the heat. Scatter the cooked fish on one half and top with half of the sauce. Fold the pancake in half, and plate. 

6. Top with the remaining sauce and a nice sprinkle of Samphire. 

7. Serve with a wedge of lemon to squeeze and your choice of sides.
